If I am interested in psychiatry and working for the CIA, what would be my area of interest?
Such as Arts and Sciences, Business, Criminal Justice, Education, Human Services, Nursing/Health Care, Psychology, Technology, etc..
Yes both at the same time. It is possible that being a psychiatrist and working for the CIA gets you the job of being able to predict a criminals mind or mind manipulation. It’s also possible searching it up. Something like that. Such as law and order. I am just very interested in it.

You will find some very clear direction by looking up those majors listed with different colleges and universities. Each institution will require accumulative credits that will steer you a specific direction.

Criminal Psychology?

At the same time??!! For psychiatry you need to study medicine. You do psychiatry as a specialisation after getting medical qualifications. Intelligence agencies employ people with generalist qualifications - it doesn’t matter what you study, just get decent marks in it.

You would want to major in psychology, possibly with a minor or double major in criminology/criminal justice (since there are overlaps between the two programs and have similar required courses).
that being said, do you know the difference between psychiatry and psychology? psychiatry tends to deal with people with mental illness and have the ability to write drug prescriptions whereas a psychologist wants to understand the processes of perception/behaviour and then analyze it empirically.

it would be best to specialize in psychology so you can work in the behavioural analysis unit

I thought first you were joking. Then, I got really worried when I realized you are serious. CIA psychiatrists… well, go over the data yourself.
